This light and creamy recipe is perfect for a bite-sized dessert or snack! Add some extra fruit and Herbaland's Pineapple Ginger Gummies for even more flavor and fun đ
Ingredients:
- 1.5 cups of soaked cashews, soak over night in water or cover with boiling water for 1/2 hour
- 1 large lemon, juiced
- 1/3 cup coconut oil, melted
- 2/3 cup full fat coconut milk
- Âź cup maple syrupÂ
- ½ cup chopped fresh pineapple
- Pineapple Ginger Herbaland Gummies
- Fresh berries
- Extra pineapple chunks to put on topÂ
Method:
- Throw the first six ingredients into a blender (everything but the berries and gummies)Â
- Blend until creamy smooth
- Line a baking dish with parchment paperÂ
- Pour mixture into dish and spread evenly
- Freeze until solid, about 3 hours
- Remove and cut into bite size pieces
- Top with the gummies, fresh berries and pineapple chunks
- Enjoy!
