Looking for a healthy and delicious new salad recipe? This delicious cabbage slaw is full of cruciferous veggies and fiber!
Ingredients for Slaw
- ½ purple cabbage washed and shredded
- 4 broccoli stalks, washed and matchstick chopped
- 1 cup of chopped pea shoots
- 2 carrots, skin on and washed, grated
- ¼ cup green onion, chopped
- ½ cup cilantro, chopped
- Sesame seeds for garnish
- Lime slices for garnish
Method
- Wash and chop all veggies
- Throw all in a bowl
- Drizzle with dressing
- Garnish with fresh lime slices and sesame seeds
- PRO TIP: toss the slaw in the dressing and let it sit for a couple hours, this allows the veggies to soften but stay crunchy. Plus when the flavors are able to sit for a while, it's so much better!
Ingredients for Peanut Dressing
- 2-3 cloves of garlic
- 1-inch knob of ginger, peeled
- ½ lime, juiced
- ½ cup peanut butter
- 2 tbsp coconut aminos (or use tamari or soy sauce)
- 1 tbsp rice vinegar
- 1-2 tsp siracha
- 2 tbsp maple syrup
- Dash of chili flakes (optional)
- Dash of coconut milk (or almond or milk of choice)
Method
- Throw all of the above EXCEPT milk into a food processor
- Blend until smooth
- Slowly add milk to smooth out to desired consistency
- Add to slaw and enjoy!
